Each day, you will learn how to cook three or four different dishes. You will be taught the main techniques needed to prepare and cook Thai food so that you can continue cooking the cuisine with confidence at home. Each dish will be demonstrated, but the tutor is very keen for you to help with the preparation and cooking of the dishes. The tutor will give you plenty of alternatives for ingredients that may be hard to source, although most are readily available. You will also be taught how to make dishes more or less spicy so you can cater for every palette.
You
will receive a folder at the beginning with details of all the recipes used and
have the opportunity to make notes throughout the course. At the end you will receive a personalised
copy of Peter Vaughan;s book 'Naturally Balanced Cooking'.

Peter Vaughan
About Peter
Peter Vaughan qualified as a chef through the prestigious
Royal Academy of Culinary Arts. His mentor was Peter Kromberg, a well respected
master chef who, at the time was Executive Chef of the Intercontinental, Park
Lane. Previously he was Executive Chef of Siam Intercontinental, Bangkok so,
not only did he teach the young Peter about Thai cuisine, but also employed high
end Thai chefs in the hotel in London.
Now Managing Director of Vaughan's Kitchen (event catering)
and Vaughan's Cookery School, he has continued his fascination for this style
of cooking that comes from a country with an unbroken history of independence -
no 'fusion' cuisine here! His Thai
classes at the cookery school are always fully booked.
