We are
bombarded with conflicting advice about what to eat. The aim of this course is
to show you how to cook easy, delicious food with a nutritional slant. The
tutor's objective is to dispel myths and demonstrate that healthy food does not
mean boring food. This course is about preparing everyday nutritional recipes
using seasonal and local produce. You will cover some basic science such as
brain function, the digestive system and the importance of blood sugar control
in order to enhance understanding. However, no previous knowledge is necessary,
simply a love of food. This course is designed to suit beginners as well as
experienced home cooks. Please note that this course is held off-site, around a
10 minute walk from the College.
My kitchen is a 10 minute walk from the
school premises. We stick to summer school timings providing doughnuts if there
is a demand!
The week is divided into 5 sessions looking
at the important macro and micronutrients (fats, protein, carbohydrates,
vitamins and minerals) - all vital for good health.
Each day we concentrate on one area where I
will be demonstrating recipes
containing the relevant foods and their health benefits.
Vegetables feature across the week, they are
hugely important with their healing and protective powers. We will be looking
at different ways to cook them without losing goodness.
Fats are as important as protein, we will
look at both and ways to incorporate into our diets on a regular basis whether
you are have an allergy, are intolerant or are vegan or vegetarian.
We will cover the ever-controversial
carbohydrates, including the wheat and gluten intolerance 'epidemic', analysing
the pros and cons of these energy-giving foods.
The power of food has been known for a very
long time, there is no doubt that what we eat makes an enormous difference to
our overall health and how we feel.
We have the very best and the very worst of
foods available making choices even harder.
Research shows that poor food choices are a
contributory factor to chronic disease.
2500 years ago, Hippocrates said to his
students 'Let thy food be thy medicine
and thy medicine be thy food'. It has been known for a very long time that good quality food can have a positive
influence on our health.
My aim is demonstrate easy, delicious recipes
packed full of goodness that are simple to prepare and help to ward off chronic
disease.
In addition, we will cover topics such as
stress, digestion, immune function, acid/alkaline balance, hormones and
exercise.

Nutrition is about the concentration of vitamins, minerals, trace elements, amino acids,
enzymes, hormones and more. For optimal health we need to attain nutritional
microenvironment of every cell to achieve or restore optimal health.
Deficiencies and imbalances may cause you to be more susceptible to disease and
degeneration.

I trained as a Nutritional Therapist at the renowned Institute for
Optimum Nutrition 20 years ago moving to Wiltshire 11 years ago from London.
As a Nutritional Therapist I use both a complementary and holistic
approach, alongside the use of specific foods, food supplements as appropriate
to promote optimum health and wellbeing.
Nutritional Therapy can work alongside orthodox medicine
taking into account an individual's background and needs to support the body's
various systems. Rather than focusing on
individual symptoms a Nutritional Therapist will consider their underlying
causes and address any biochemical imbalances or deficiencies found. This will assist the body to both heal itself
and resist further disease and illness.
