Exploring Thai Cuisine

294 TUTOR: Peter Vaughan (Vaughan's Cookery School)

Each day, you will learn how to cook three or four different dishes. You will be taught the main techniques needed to prepare and cook Thai food so that you can continue cooking the cuisine with confidence at home. Each dish will be demonstrated, but the tutor is very keen for you to help with the preparation and cooking of the dishes. The tutor will give you plenty of alternatives for ingredients that may be hard to source, although most are readily available. You will also be taught how to make dishes more or less spicy so you can cater for every palette. Please note that this course will be taken via minibus to Vaughan's Cookery School in Devizes.

 

Course Notes

You will receive a folder at the beginning with details of all the recipes used and have the opportunity to make notes throughout the course. At the end you will receive a personalised copy of Peter Vaughan;s book 'Naturally Balanced Cooking'.

Introduction to Thai ingredients plus the importance of the five tastes to produce balanced dishes.

Understanding how to cook perfect Jasmine rice

Day 2

Red curry paste

Tod Man Pla fish cakes

Ginger & pineapple salsa

Green papaya salad

Mango sticky rice dessert

Day 3

Massaman curry paste

Cucumber salad

Satay

Banana and coconut pancakes

Day 4

Yellow curry paste

Sweetcorn pancake

Sweet chilli dipping sauce

Thai prawn toasts

Sweet & sour tofu salad

Day 5

Coconut milk soup

Spicy beef slald

About Peter

 

Peter Vaughan qualified as a chef through the prestigious Royal Academy of Culinary Arts.As a young man he worked with high-end chefs from all over the world and developed a real passion for exploring other cuisines.

Having also qualified in Nutrition and Herbalism, it has helped him develop his 'naturally balanced' style of cuisine, with a lighter, fresherhealthier 'take' on all his dishes. He also uselocal, seasonal ingredients where possible, biodegradable packaging and keepfood waste to a minimum.

Now Managing Director of Vaughan's Kitchen (Event Catering) and Vaughan's Cookery School, all his classes are very popular and leads the team that run the professional cookery courses at Vaughan's Cookery School.
