284 TUTOR: Vaughan's Cookery School
Throughout the week you will develop your skills and knowledge to help you to create perfect patisserie. You will be making three to four recipes daily that will improve your culinary skills while extending techniques learnt; giving you the confidence to create some spectacular showstoppers at home and for others
We will explore the main skills and techniques a good pâtissier needs to successfully create dishes.
Basic pastry - sweet and savoury tartes
Roulades and meringues.
Souffles both hot and cold
Choux pastry savoury and sweet recipes, crème diplomat
Delices, Bavarois and mousses
